I have about 5 checks on hand that cannot be cashed or deposited due to my boss, who has insufficient funds.?

He has insufficient funds in his account, and refuses to pay me on time. I have checks dating all the way back to February of 2010, and it is almost JUNE. He pays the dishwashers and busboys, and all the illegal people CASH, before paying me. Where do I report this to? Who can I contact about this? I'm located in Texas in the Houston area. Someone please help me out.
